Whipped Almond Potatoes

  • 1 lb russet potatoes
  • 1/2 cup sour cream
  • 1/4 cup chives
  • 4 Tbs butter
  • 1 1/2 tsp salt
  • 1 Tbs Stirling California Almond Syrup


  • In a large pot, boil potatoes until tender. If desired, peal skin from potatoes. Transfer to a stainless steel bowl and using a potatoe masher, mash Potatoes well. In the same pot, on medium high heat, melt butter. Transfer mashed potatoes to the pot and stir vigorously. Add sour cream, chives and salt. Using a hand held mixer, whip potatoes until creamy. Add Stirling Almond Syrup. Taste and adjust salt accordingly. Serve hot.
